The most amazing one ingredient ice cream

If you’re an ice cream lover who has been seeking a healthier, natural alternative – this one ingredient banana ice cream will change your life.

It’s almost too good to be true! You can create delicious, creamy, sweet-tooth-satisfying ice cream using only frozen banana and a food processor.

WHAT YOU’LL NEED

  • A knife and cutting board

  • An freezer-safe container

  • A spoon or spatula

  • Food processor (or a powerful blender)

INGREDIENTS

  • 1 large, ripe banana

    (bananas get sweeter as they ripen, so as with banana bread, bananas with brown spots work perfectly)

METHOD

Firstly, you’ll need to peel the banana and chop it up into 1cm wide pieces. Once it’s chopped, place it in the freezer in a container or freezer bag.

The banana needs to be fully frozen, which takes about 2 hours.

Once the banana is frozen, it’s time to pulse the frozen banana pieces in a food processor.

The ice cream will come together in stages - to don’t lose hope if it doesn’t happen instantaneously.

Pulse the banana until it looks crumbly, stop and scrape down the food processor to make sure all of the banana continues to be incorporated.

Begin pulsing again — after a few rounds of pulsing the banana will look like a paste. Once it looks like a gooey paste, scrape down the sides again and start to blend for longer periods, until the banana starts to look like porridge.

As you blend, the banana will get smoother, but may still have chunks and lumps.

Continue to scrape down the food processor as necessary.

After a few rounds of blending and scraping, the all-natural magic will begin to happen! As the final chunks of banana become smooth, you'll see the mixture shift from blended banana to creamy, soft-serve ice cream texture.

Blend for a few more seconds to aerate the ice cream to make it light, fluffy (and addictive).

OPTIONAL EXTRAS

I have experimented with adding a tablespoon or so of cacao powder to make chocolate ice cream, as well as a couple of tea spoons of matcha powder to make green tea ice cream. Both work very well.

Adding in some almond butter or natural peanut butter is also a great option for incorporating additional flavours.

You can enjoy your delicious, all-natural, vegan ice cream by itself, or with chopped nuts, berries or any of your favourite ice cream toppings!
